cheeseburger/taco pizza rolls


I made this super easy, yummy thing for dinner tonight.


Saute one onion and add one pound of hamburger. Cook until no longer pink. Add one package of taco seasoning w/ 3/4 cup of water and simmer for 5 minutes.

One package of pillsbury pizza crust. Roll out onto a cookie sheet sprayed w/ cooking spray.

place the meat mixture and 2 cups of shredded cheese in the middle of the dough. Fold in the ends and fold the sides over the mixture. Cook in the oven for 2o minutes at 400 degrees.

Greek Night--Opa!

For our Greek night we, once again, had some awesome food!!

Our menu:

Steak pitas w/ tzatziki sauce
moussaka w/ eggplant
spanakopita
hummus
greek pasta salad
greek lettuce salad
baklava

Fish tacos w/ corn salsa


Tilapia fish

1 T cayenne pepper

2 t black pepper

1 T salt

rub the fish w/ olive oil, drizzle w/ lemon juice and then sprinkle the salt/pepper mixture on both sides.


Salsa


1 c corn

1/4 c cilantro

2 avocados cut up

1/4 c red onion chopped

zest and juice from one lime

1/4 c of chopped jicama

I think this would be good w/ black beans added as well


place the fish, sour cream, and salsa in a corn tortilla.

Thai Time

Our menu consisted of:
Chicken skewers w/ satay sauce
cucumber sauce-more of a salad though
rice noodles w/ bean sprouts
edamame w/ a yummy sauce
spring rolls w/ peanut sauce
Thai ribs
Coconut soup
A salad that was really good but I didn't make it and can't remember what was in it
For dessert we had:
Sticky rice w/ mangoes and a coconut sauce
Fried bananas



We had our Thai night and we hosted it this time. I was a bit stressed out cooking the food because I had never cooked anything like it before and there were a lot of new ingredients as well. It all turned out great and everybody brought some really yummy sides, I have never had Thai food before but I loved it!!!!

French night

We have started doing an around the world theme of dinner parties. They are hosted at a different persons house each month. Our first night was French and it was so much fun.
Here is what the menu consisted of;

French Dip sandwiches
sauteed belgian endive w/ pinenuts, bacon and a mustard vinaigrette
homemade au gratin potatoes w/ real french cheeses
baked brie
a pear salad that was very yummy
and crepes w/ all the works and french silk pie for dessert

Stuffed Peppers

I love Stuffed Peppers but haven't made them in awhile.
Here is the recipe(very easy)
1 box of spanish rice-I use olive oil instead of butter to saute the rice and definitely add the can of tomatoes-use rotel if you like a bit spicier.
Meanwhile, saute 1/2 of a chopped onion, garlic cloves and mushrooms.
cook 1 lb. of hamburger and then mix everything together and add one can of corn. It may need a bit of salt and pepper and spices to your liking.
Cut 3 bell peppers in half and discard the seeds. Lay open in a 9x13 pan and put the filling in the top and fill all around the peppers. Top w/ mozzarella or monterey jack cheese and bake at 350 for 30 minutes.
